Kheer Rice Pudding

Kheer-Rice pudding is a very traditional and oldest form of desert that is well liked by all people throughout the world.


1 mug of cooked (long grain rice)basmati rice

8 green crushed cardamom pods

2 tablespoons essence of rose

2 tablespoons pistachio nuts ground

71/2 cups of full milk

7-8 saffron strands

12 tablespoons sugar


The rice is to be finely ground and laid in a saucepan  along with cardamoms. Put in 6 3/4 cups of milk and bring it to boil over average heat moving continuously. Put in left over milk and again cook over a average heat til the rice fusion thickens to a smooth consistency. As the rice starts cooking and the kheer/pudding begins getting a consistency, put in the previously chopped nuts. 5. put in Saffron powder/strands (7-8). Put in sugar and the rose essence and carry on cooking for an extra 2 minutes. Garnish it with nuts and Serve chilled.
